To honor Datsyuk’s remarkable career and Russian heritage, we present Datsyuk's Russian Honey Cake. This classic dessert, celebrated for its layers of rich honey flavor and creamy filling, is a staple in Russian cuisine and perfect for any special occasion. With its harmonious blend of sweetness and warmth, this honey cake is sure to captivate your heart.

Ingredients

For the Cake Layers:

1/2 cup (1 stick) unsalted butter

3/4 cup honey

1/2 cup granulated sugar

1 teaspoon vanilla extract

1/4 teaspoon salt

3 large eggs

3 cups all-purpose flour

1 teaspoon baking soda

For the Cream Filling:

2 cups sour cream (full-fat)

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

For Garnish:

Crushed cake scraps or cookie crumbs

Drizzle of honey (optional)

Directions

Prepare the cake layers:

Preheat your oven to 350°F (175°C). Line 2–3 baking sheets with parchment paper.

In a heatproof bowl set over a saucepan of simmering water (double boiler), melt the butter, honey, and sugar, stirring until smooth. Remove from heat.

Whisk in the vanilla, salt, and eggs until combined.

Add the baking soda and whisk until the mixture lightens and expands slightly.

Gradually mix in the flour, forming a soft dough. The dough will be sticky but pliable.

Roll and bake:

Divide the dough into 8–10 equal portions. Roll each piece into a thin circle (about 8 inches in diameter) on a floured surface. Trim using an 8-inch plate or pan as a guide.

Transfer each circle to the prepared baking sheets. Bake for 5–7 minutes or until golden brown. Cool completely. Reserve the trimmings for garnish.

Make the cream filling:

In a large mixing bowl, whip the heavy cream with powdered sugar until soft peaks form.

Gently fold in the sour cream and vanilla extract until smooth and creamy.

Assemble the cake:

Place one cake layer on a serving plate and spread a generous layer of cream filling on top. Repeat with remaining layers, stacking them neatly.

Use the remaining cream to frost the top and sides of the cake.

Garnish:

Crush the reserved cake trimmings into fine crumbs and press them onto the sides and top of the cake. Drizzle with honey if desired.

Chill and serve:

Cover the cake and refrigerate for at least 6 hours, or overnight, to allow the flavors to meld and the layers to soften.
