Ingredients:

·         8 ounces dark chocolate, finely chopped

·         1/2 cup heavy cream

·         2 tablespoons unsalted butter

·         1 tablespoon instant espresso powder

·         2 tablespoons whiskey (Ted Lindsay was known for his boldness!)

·         Cocoa powder or powdered sugar for coating

Instructions:

  1. Prepare the chocolate mixture: Place the finely chopped dark chocolate in a heatproof bowl. In a small saucepan, heat the heavy cream and butter over medium heat until it just begins to simmer. Remove from heat and stir in the instant espresso powder until dissolved. Pour the hot cream mixture over the chopped chocolate and let it sit undisturbed for a minute.
  2. Create the truffle mixture: Gently stir the chocolate and cream until the chocolate is completely melted and smooth. Add the whiskey and mix until well combined. Cover the bowl and refrigerate the mixture for at least 2-3 hours or until firm.
  3. Shape the truffles: Once the chocolate mixture has chilled and firmed up, use a spoon or a small scoop to portion out small amounts of the mixture. Roll each portion into a ball between your palms to form truffles. Place the formed truffles on a parchment-lined baking sheet.
  4. Coat the truffles: Roll the truffles in cocoa powder or powdered sugar until evenly coated. Return the coated truffles to the baking sheet.
