Ingredients:

For the crust:

·         1 ½ cups graham cracker crumbs

·         1/4 cup granulated sugar

·         1/2 cup melted butter

For the cheesecake layer:

·         16 oz cream cheese, softened

·         1/2 cup granulated sugar

·         2 eggs

·         1 teaspoon vanilla extract

For the pumpkin layer:

·         1 cup pumpkin puree

·         1/3 cup brown sugar

·         1 teaspoon ground cinnamon

·         1/2 teaspoon ground nutmeg

·         1/4 teaspoon ground cloves

·         1/4 teaspoon ground ginger

·         2 eggs

·         1/2 cup evaporated milk

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. Prepare the crust: In a bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture evenly into the bottom of the prepared pan. Bake for 8-10 minutes, then remove from the oven and let it cool slightly.
  3. Prepare the cheesecake layer: In a mixing bowl, beat the softened cream cheese until smooth. Add the sugar, eggs, and vanilla extract, and beat until creamy. Spread this cheesecake layer evenly over the cooled crust.
  4. Prepare the pumpkin layer: In another bowl, mix together the pumpkin puree, brown sugar, cinnamon, nutmeg, cloves, ginger, eggs, and evaporated milk until well combined. Gently pour this pumpkin mixture over the cheesecake layer.
  5. Bake the bars: Place the pan in the preheated oven and bake for 35-40 minutes or until the edges are set, and the center is slightly jiggly. Remove from the oven and let it cool completely at room temperature.
  6. Chill and serve: Once cooled, refrigerate the bars for at least 3-4 hours or overnight for best results. When ready to serve, use the parchment paper to lift the bars out of the pan, slice into squares, and enjoy!
