Ingredients

For the Crust:

·         1 ½ cups graham cracker crumbs

·         ⅓ cup melted butter

·         2 tablespoons sugar

·         1 teaspoon vanilla extract

·         4 large eggs

·         1 cup sour cream

·         1 ½ cups fresh cranberries

·         Zest of 1 orange

·         2 tablespoons orange juice

Instructions:

  1. Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. Mix the graham cracker crumbs, melted butter, and sugar for the crust in a bowl until well combined. Press the mixture onto the bottom of the prepared pan. Bake for 10 minutes. Remove and set aside to cool.
  3. In a food processor or mixer, beat the cream cheese, sugar, and vanilla until smooth. Add the eggs, one at a time, mixing well after each addition. Blend in the sour cream until the mixture is creamy and smooth.
  4. In a saucepan over medium heat, combine the cranberries, sugar, orange zest, and orange juice. Cook for about 10 minutes or until the cranberries burst and the mixture thickens. Remove from heat and let it cool slightly. Blend the cranberry mixture until smooth.
  5. Pour the cheesecake filling over the cooled crust. Spoon dollops of the cranberry mixture on top of the filling. Use a knife to gently swirl the cranberry mixture into the cheesecake batter to create a marbled effect.
  6. Place the cheesecake in the preheated oven and bake for 55-60 minutes or until the center is almost set. Turn off the oven and let the cheesecake cool inside with the door slightly ajar for an hour.
  7. Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 4 hours or overnight before serving.
